Orange & Smokey Bacon Baste

A delicious baste for poultry

6oz soft butter, finely grated rind of 1 orange, 3 smoked bacon rashers finely chopped, 2 tablespoons chopped fresh herbs, black pepper.

Mix together all the ingredients and carefully loosen the skin over the turkey/chicken breast. Spread the butter mixture under the skin and roast according to guidelines given for your bird.
